This competition proposes to creatively put together a dish that contains at least three Italian ingredients, one of which this year must be Negrini truffle mortadella

With the Italia venerdí sera recipe, Carlotta Andrea Cofano, a Chef from Barcelona’s restaurant Piero Trattoria Pizzeria, has won the 16th Negrini Creative Cooking Contest, held within the framework of the 21st edition of Madrid Fusión. Trained in Food Design at IED Barcelona, she is the first woman to conquer this competition, which proposes to creatively put together a dish that contains at least three Italian ingredients, one of which this year must be Negrini truffle mortadella.

The winning recipe was a fried ravioli made with cheese that has been cured for 36 months, as well as the aforementioned mortadella. A seemingly simple proposal, but difficult to execute, which delighted the jury.

As a reward, Cofano will enjoy a gastronomic trip to Italy, visiting restaurants, wineries, food production centres and attending food presentation courses.
